Aug 31st 2013, 07:00, by By Sang Yoon

Master Class: Lukshon chef Sang Yoon took his time experimenting with dandan noodles, a Sichuan staple. He finally found the right 'numb-hot' balance and structure, and now shares his recipe.

Anyone who's ever worked with me in the kitchen knows that I like to tinker with dishes for a while before I decide to finally offer them on the menu. But then once I've gotten them where I want them to be, I tend to let them be. Normally, recipes for my menu items stay consistent and don't change. However, there's been one exception. The dandan noodles at my restaurant Lukshon.

Critic's Choice: Il Grano and Lucques in L.A. and Marché Moderne in Costa Mesa are among area restaurants that can indulge a fresh tomato craving.

At this point, it's hard to imagine Californian and Mediterranean cuisines without tomatoes. But that was the case until the tomato plant was discovered in Mexico by Spanish conquistadors in the 16th century, and from there it disseminated to the rest of the Americas and the Mediterranean. In some climates, New Jersey, say, the tomato season is short. Not so in Southern California. We'll be enjoying our heirlooms and beefsteaks well into November. Right now, the season is at its height, and tomatoes play star roles on menus, from the BLT to haute cuisine.

California Cook: Burrata and tomatoes, a combination made in culinary heaven. But that's not all. Zucchini, eggplant, pepper and prosciutto pair well too.

As sure as summer's heat brings ripe tomatoes, it also sparks a craving for burrata . They go hand-in-hand, nearly perfect by themselves, utterly profound when combined.

Pomegranate molasses, pomegranate juice and date molasses give fruity sweetness to Rosh Hashanah dishes.

Pomegranates and dates, signature Rosh Hashanah fruits in many households, have been associated with the culture of the Holy Land since biblical times.

Aug 31st 2013, 07:00, by By David Karp

It's prime season for specialty apples. From the Golden Russet to the Hauer Pippin, the flavorful specimens will be available at local farmers markets over the next few months.

Commercial apple varieties mostly lack the intensity, complexity and idiosyncrasies of the finest older and specialty kinds, for which the prime season has just begun. It's a good time to review the most flavorful varieties that will be available at local farmers markets over the next few months.

When most chefs talk about the “dining experience,” they’re referring to the normal parameters -- how the decor complements the service, which complements the food. Craig Thornton takes that a quantum leap further. He wants his dinners to be transformative.
