Some 30 years after Wolfgang Puck introduced a wood-burning oven and his sophisticated pizza at the original Spago, we're enjoying a pizza renaissance. And many of the newer pizzerie and restaurants are turning out pies better than typical neighborhood joints in Italy — and by a long shot. Though Pizzeria Mozza gets the lion's share of attention and remains one of the toughest reservations in town, there are plenty of other chefs making great pies at places that are easier to get into at the spur of the moment — Steve Samson and Zach Pollack at Sotto, Jeff Mahin at Stella Rossa Pizza Bar in Santa Monica, Travis Lett at Gjelina and Gjelina Take Away and Nicola Mastronardi at Pizzeria il Fico. But there are other simpler places to find exceptional pizza too. Here are a few that fly under the radar, but maybe not for long.

Josef Centeno's new Tex-Mex cantina, Bar Amá, does Tex-Mex its own way, queso included.

When you talk to Texas expatriates about the food they miss most from home, after a few grumbly sentences about Los Angeles chili, and barbecue, and coffee-shop chicken-fried steak, it comes down to the queso every time. I am not one of those writers who harps on authenticity, and when I have a shot or two of tequila in me, I can even admit the merits of Tex-Mex as a regional Mexican cuisine. Migas , the spicy Tex-Mex equivalent of chilaquiles , are among the greatest breakfast foods ever invented. My favorite cooking video ever is the clip of Texas director Robert Rodriguez making his breakfast tacos: "Get those flour tortillas, the ones you usually find at the store … and throw them in the trash."

While testing recipes a few weeks ago, something strange happened. A deep whiff of the Manhattan-style clam chowder I had just made transported me for a brief moment to my grandmother Josephine Cimarusti's kitchen in Lindenhurst, Long Island. A white-and-green striped sugar bowl with a stainless, hinged, flip-top lid sat on the kitchen table; the scent of clam cakes and chowder filled the air. Perhaps you can relate. We all have foods that we 're nostalgic about. For me, chowder is one of them.

The kimchi dumplings at Matthew Kenney's M.A.K.E. restaurant in Santa Monica might be the poster dish for modern raw cuisine: origami-like bundles of cashews, pickled cabbage and tahini, packaged in wrappers made with dehydrated coconut purée mixed with cilantro juice so that they're bright green, and served with sesame-ginger foam, nasturtium flowers and micro-cilantro. Hello to the new raw food.
